1 tsp | vanilla essence |
1/2 cup | caster sugar |
2 cups | plain flour |

Unbalanced almonds
Method:
Place butter, castor sugar and essence into a food processor and blend together. Add flour gradually until a soft dough is formed.
Remove 2/3 of the dough from the processor. Roll half this mixture into small balls, then coat with the coconut and press a half cherry on top.
Roll the remaining dough into rounds, then into beaten egg white and a little castor sugar. Top each with an almond.
Add to the remainder of the dough in the processor 1 tablespoon of cocoa and work in. Shape mixture into small balls, press a button into each.
Arrange biscuits on a baking tray lined with baking paper and bake in a preheated oven of 180°C for 12 to 15 minutes.
