For 3/4 cup per serving Points Plus 2 Ingredients
    2 medium  corn on the cob, fresh (2 cups)
    2 small  fresh tomato,, (es), preferably heirloom, diced
    3 medium  uncooked scallion,, (s), chopped
    3 Tbsp  mint leaves, fresh, chopped
    1/2 oz  green hot chili peppers, seeded and minced
    1  jalapeƱo, seeded and minced
    1  clove,, (s) (medium) garlic clove(s), minced
    2 Tbsp  unsweetened lime juice
    2 tsp  olive oil
    1/2 tsp  table salt

Instructions
Toss together all the ingredients in a serving bowl. Serve at once or cover and refrigerate up to 2 hours. Yields 3/4 cup per serving.
Notes
If you prefer your corn cooked, put the kernels in a small microwavable dish. Cover the dish with plastic wrap and vent one corner. Microwave on High until the corn is tender, about 4 minutes.
