LIME DIVINE CREATIONS First Place -Dallas Morning News Ingredients
    4  whole eggs
    2  egg yolks
    1 cup  granulated sugar
    1/2 cup  lime juice
    2 teaspoons  lime zest, green part only
    1/2 cup  unsalted butter, cut Into small pieces
      Pastry shells,, (recipe follows)
White chocolate curls
      Powdered sugar

To make the Filling
In a large bowl, beat the eggs and egg yolks until light. Add sugar, lime juice and zest, and stir well. Pour Into the top of a double boiler. Add the butter, and place over (not touching} simmering water. Cook, stirring constantly, until thickened.

Remove from heat, pour Into a bowl, let cool and chill. The filling will thicken more with refrigeration.

Make the pastry shells.

Fill the shells 3/4 full with the filing. Just before serving, garnish with white chocolate curls and dust with powdered sugar

Makes about 4 dozen cookie cups

Pastry shells: Preheat oven to 400 F. In a large bowl, combine 2 cups flour and 1 cup powdered sugar. Cut in 3/4 cup unsalted butler with a pastry blender until Ihe mixture is crumbly. Stir in 3 tablespoons ice water with a fork, mixing until fine crumbs form. Gather up the dough and pat into 2 balls.

On a lightly floured work surface, roll out 1 ball 1/8-inch thick. Cut out 2 1/2-inch rounds to fit small (1 1/2 x 1/2 inch) miniature muffin cups. Roll out and cul remaining dough the same way Gather leftover dough, reroll and cut out.
Bake for 6 to 6 minutes Remove from pans, and cool
