| 1t | fresh ginger root minced |
| 6 lg | carrots sliced |
| 2/3c | orange juice |
| 1T | butter |
| 2t | honey |
| 1t | grated orange peel |
| 1/4t | s&p |
| 1/4c | chopped walnuts |
Sauté onion in oil til tender, add ginger,cook one minute
Stir in carrots, orange juice,butter, honey,orange peel s&p.
Bring to boil. Reduce heat; cover and simmer 12 min
Stir in walnuts, sprinkle with parsley
