Sauteed Spinach with Balsamic Vinegar

2 Tb. | extra-virgin olive oil |
2 lbs. | young spinach leaves, rinsed, drained, and stemmed |
1/2 tsp. | minced garlic, (about 1 clove) |
1 Tb. | balsamic vinegar |
kosher salt and freshly ground pepper , to taste |
In a large skillet over medium heat, warm the oil. Add the greens and saute until softened, about 2 minutes. Stir in the garlic and vinegar. Cover and continue to cook for 2 minutes. Remove from the heat. Season with salt and pepper to taste and serve immediately.
