    1  eggplant
    1  green pepper
    1  onion
    1  jalapeƱo
    2 cloves  garlic
Sauce:
    3 tbs  soy sauce
    2 tbs  rice wine vinegar
    2 tsp  corn starch
    1 tsp  sesame oil

Sriracha or cayenne pepper

Cube eggplant, sprinkle with salt and drain in a colander for 30 min. Rinse. Fry veggies 5-10 min in medium high. Add garlic and then sauce. Garnish with green onions
