    3 1/4 cups  all-purpose flour
    1 tbs.  Baking powder
    1 tsp.  Salt
    1/2 tsp.  Baking soda
    1/2 cup  cold butter, cut into 1/2" pieces
    1 1/4 cup  buttermilk
    2 tbs.  Buttermilk
    1 1/2 cups  shredded sharp cheddar cheese, about 6 oz.
    1  egg beaten

Preheat oven to 425•F. Coat baking sheets with cooking spray. In bowl, combine flour, baking powder, salt and soda. With pastry blender or two knives, cut in butter until mixture resembles coarse crumbs. Stir in 1 1/4 cups buttermilk, 1 cup cheese and egg until dough forms.

On lightly floured surface, pat dough to 3/4" thickness. Using 3" round cutter, cut out 9 biscuits, reshaping scraps as necessary. Place biscuits on baking sheets; brush with remaining 2 tbs. Buttermilk. Bake 15 minutes or until golden, sprinkling tops with remaining 1/2 cup of cheese during last 4 minutes. Transfer biscuits to rack; cool slightly , about 10 minutes.
