INGREDIENTS: | |
1 cup | chopped onion |
1/2 cup | chopped green bell pepper |
1 stalk | celery, finely chopped |
3 TBSP | minced fresh parsley |
1 tsp | pepper |
2 | garlic cloves, minced |
2 | egg whites, lightly beaten |
3/4 cup | quick cooking oats |
1 1/2 lbs | very lean ground beef, ground buffalo or ground turkey |
1/4 cup | low-sodium ketchup |
cooking spray, (optional) |
Preheat oven to 350 degrees
Combine onion, bell pepper, celery, parsley, pepper, garlic, oats and egg whites in a large bowl, tossing to moisten oats. Crumble meat over onion mixture, and mix just until blended. Pack mixture into a loaf pan lined with cooking parchment or coated with cooking spray. Brush ketchup over top of loaf. Bake at 350 degrees for 1 hour or until instant-read thermometer registers 160 degrees. Let loaf stand in pan 10 minutes before serving.
