    ¼ Cup  vegetable oil
    2 squares  unsweetened chocolate,, (2oz) chopped into small pieces (Scharffen Berger or Ghirardelli)
    1 Cup  granulated sugar, (cane sugar if have it)
    2  eggs
    1 teaspoon  vanilla
    1 Cup  all purpose flour
    1 teaspoon  baking powder
    ¼ teaspoon  salt
    ½ Cup  powdered sugar,, (confectioner’s ) sugar

1. Melt chocolate in a double boiler or nonstick pan over low heat, stirring frequently.
2. In a large bowl mix the melted chocolate, oil and granulated sugar. Mix in egg, one at a time, to blend well. Stir in vanilla.
3. In another bowl, mix flour, baking powder, and salt. Add this to chocolate mixture and mix well. Chill dough several hours or overnight.
4. Pre-heat oven to 350 degrees.
5. Drop dough by teaspoonfuls (or use a mini ice cream scooper) into powdered sugar. Roll in sugar; shape into balls. Place about 2 inches apart on a greased (or silicone) baking sheet. Bake 10-12 minutes. DO NOT OVERBAKE! Cookie will be soft, yet firm around edges.
