    3 cups  sugar
      water
    2 cups  heavy cream
    1/2 cup  simple syrup
    1/4 cup  dark rum
    6 ounces  dark chocolate, (40%)
    6 ounces  milk chocolate, (60%)

Bring cream, simple syrup & rum to a boil: remove from heat.
Bring sugar and water to a boil: cook to caramel stage: Deglaze with warm cream mixture.
Pour hot caramel over chocolate, combine, strain.
