225 g | butter, softened |
320 g | packed light brown sugar, maybe add 1/4 cup honey? or more brown sugar |
2 | eggs |
10 ml | vanilla extract |
155 g | all-purpose flour |
4 g | baking soda |
7 g | baking powder |
3 g | salt |
245 g | quick-cooking oats |
120 g | chopped pecans |
200 g | dried cherries, cooked with 1 cup water |
1/4 cup | reserved cherry liquid |
DIRECTIONS
Preheat the oven to 350 degrees F (165 degrees C). Scale out to 50 g.
In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
Bake for 6-10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
