Crockpot Pulled Pork

3lb | pork butt |
3TB | brown sugar |
1TB | dry mustard powder |
1TB | chili powder |
1TB | garlic powder |
1/2TB | pepper |
2TB | salt |
1 cup | water |
1 medium | onion, chopped into large cubes |
2TB | canola oil |
Your favorite BBQ sauce (I like Sweet Baby Rays)
Mix the dry ingredients together, then rub all over the pork. Wrap in plastic and let rest in the fridge for at least an hour. Throw the roughly chopped onion in the bottom of a crock pot. Heat up the oil in a pan. Sear off the pork on ALL sides...about a minute on each side. Remove the meat and place on top of the onions in the crock pot. Pour a cup of water into the hot pan and scrape off all the burnt bits. Bring to a boil, then pour that over the meat. Add more water to the crock pot to come half way up the meat. Cook on low for 10-12 hours.
Carefully remove the meat from the crockpot, then shred with 2 forks. Strain what's left in the pot and reserve all the liquid. After the liquid sits for a bit, try to remove as much of the fat off the top as you can. In a sauce pan, pour in some of the liquid (about 1/2 cup), then add in BBQ sauce and stir to combine over low heat. Here's where it's up to you...play around with the liquid/BBQ sauce combo to get the flavor you want. I personally don't prefer too much BBQ sauce flavor. Place the shredded meat in a pot, gradually stir in some of the sauce you created. Do it in small batches to get the pulled pork the consistency you want. Heat to combine all the flavors. I put it on mini potato rolls. Enjoy!!
