Zucchini Appetizer Squares

4 cups | Zucchini, thinly sliced |
1 cup | buttermilk baking mix |
4 | eggs, beaten to blend |
½ cup | onion, finely chopped |
½ cup | Parmesan cheese, freshly grated |
½ cup | vegetable oil |
2 tablespoons | fresh parsley, chopped |
1 | garlic clove, minced |
½ teaspoon | dried oregano, crumbled |
½ teaspoon | seasoned salt |
½ teaspoon | salt |
pepper, freshly ground |
Preheat oven to 350
Butter 9X13-inch ovenproof glass baking dish. Mix all ingredients in a large bowl. Spread in prepared dish.
Bake until golden brown and tester inserted in center comes out clean, about 30 minutes. Cut into 1-inch squares.
Makes about 9 dozen
