4-5 small | zucchini |
1 | ripe tomato, peeled and chopped |
½ | onion, sliced thin |
1 tablespoon | olive oil |
1-2 tablespoons | Romano, grated |
salt and pepper to taste |
Slice zucchini no more than ¼-inch thick. Place in 10-inch frying pan. Start on a high heat to sear the vegetables. Add onions and olive oil. Stir for about a minute or two. Add the tomato and cook for about 3 minutes. Add salt and pepper to taste, and add the grated cheese. Cover and turn heat off. Serve immediately. It can be served over rice or just as is.
