| 1/4 cup | salted Pistachios |
| 1/2 cup | unsalted Pistachios |
| 2 tbs | brown sugar |
| 1 cup | sugar |
| 2 eggs yolks | |
| 1 cup | milk |
| 2 cup | heavy cream |
| 1 teaspoons | almond extract |
chop 3 tbs of pistachios to a fine powder
Chop the rest of the pistachios to 1/4 inch chunks
Mix sugar ,milk and cream, and bring to a simmer
Temper eggs and add to the mix
Add pistachios and extract to mix
cool down and add to ice cream machine
