STEVE’S POTATO SOUP | |
3 tbsp | margarine |
1 large | onion |
½ c. | sliced carrot |
½ c. | sliced celery |
1 | garlic clove |
4 c. | diced potato |
2 c. | chicken stock |
1 ½ tsp | salt |
¼ tsp | pepper |
1 tsp | parsley flakes |
2 c. | milk |
½ c. | grated cheddar cheese for garnish |
Put first 5 ingredients into large saucepan. Sauté veggies until onion is soft and clear. Add potato, chicken stock, salt, pepper and parsley. Bring to a boil. Cover and simmer slowly until veggies are cooked. Stir occasionally. Stir in milk. Heat without boiling. Makes 5 cups.
