Nine Week Blueberry Muffins | |
3 cups | sugar |
5 cups | flour |
2 tsp. | salt |
4 tsp. | soda |
4 | eggs |
1 quart | buttermilk |
1 cup | melted butter |
1 15 oz. box | bran flakes |
1 can | blueberries, drained, (I haven't been able to find canned blueberries, so I use frozen -- 12 - 16 oz. package) |
Put buttermilk and bran in bowl and let stand. Mix dry ingredients. Add eggs & butter to bran mixture. Stir but don't beat. Gradually stir in dry ingredients. Fold in blueberries. Pour into greased muffin pans and bake at 400 degrees for 20 minutes.
This mixture will keep in refrigerator to use as you need it for 9 weeks, if in airtight container.
Makes approx. 3 dozen muffins
