Oven-Roasted Potatoes

3 lbs. | red potatoes |
1 large | onion, cut into 1" pieces |
1/4 c. | olive oil |
2 tsp. | Kosher salt |
1 tsp. | dried crushed rosemary |
1/2 tsp. | ground black pepper |
Preheat oven to 400 degrees. Line a rimmed baking sheet with heavy-duty foil. In a large bowl, combine potatoes, onion, oil, salt, rosemary, and pepper; toss gently to coat. Spread in a single layer on prepared baking sheet. Bake for 40-45 minutes, stirring occasionally, or until potatoes are browned and crisp. Serve immediately.
