| 1 1/4 c. | sugar |
| 1 stick | unsalted butter, chilled |
| 1 Tb. | lemon juice, plus grated peel of 2 lemons |
| 1 large | egg |
| 1 1/2 c. | flour |
| 1/4 tsp. | baking soda |
| 1/4 tsp. | salt |
1. Preheat the oven to 350 degrees. Line 3 large cookie sheets with parchment paper. Using an electric mixer, beat 1 cup sugar, the butter, lemon peel and lemon juice until fluffy. Mix in the egg, then the flour, baking soda and salt.
2. In a small bowl, add the remaining 1/4 cup sugar. Roll heaping teaspoons of dough into balls, then roll in the sugar. Place a few inches apart on the prepared cookie sheet. Bake until golden at the edges, about 15 minutes. Transfer the cookie sheets to racks to cool.
