2 Cups | dried black eyed peas |
4 cups | water |
10 strips | bacon |
1 | chopped onion |
1 1/2 cups | rice |
1 tsp | each, salt and pepper |
Bring black eyed peas and water to a boil in large pan. Reduce heat, cover and simmer 1-2 hours or until tender. Add more water if needed. When done, drain , keeping 2 1/2 cups liquid.
Cook bacon and onions until browned. Add peas and water and rice to the same pan as bacon and onions. Season to taste. Simmer for 20 minutes, covered or until rice in done.
