1 1/2 cups | SURRATT FARMS pecan halves or pieces |
1 cup | granulated sugar |
1/2 cup | light corn syrup |
1 tsp. | butter |
margarine, alternative | |
1 tsp. | vanilla |
1 tsp | baking soda |
1/8 tsp | salt |
Mix the pecans, sugar, corn syrup & salt together in a microwave-safe casserole dish until well mixed. NOTE: If you have a high-power microwave, add your pecans after cooking the mixture for four minutes, otherwise, your pecans will be too brown.
Cook in microwave on high for 4 minutes; stir well, then cook for another 3 minutes.
Stir in vanilla & butter. Microwave on high for 2 minutes.
Add baking soda & stir gently & quickly. Immediately pour into a lightly buttered jelly roll pan, spreading out thinly.
Allow mix to cool, then break into small pieces & store in an airtight container.
Special Notes:
Hint: Warm the jelly roll pan in a 250 deg. oven to make spreading the candy thinner more easily.
My microwave is a 1100 watt one; adjustments may have to be made for lower wattage ones.
This is a delicious substitute for peanut brittle & was my dad's favorite candy.
