| 3 1/4 cups | warm water |
| Pinch | sugar |
| 3 tbsp | olive oil |
| 1 tbsp | kosher salt |
| 4 tbsp | rub of choice |
| 1 tbsp | instant yeast or bread machine yeast |
| 1 lb. 6 oz. | Bread flour |
| 1 lb. 6 oz | all purpose flour |
Add yeast to bottom of the mixer and add the flour on top.
Add rest of the ingredients into mixer, mix to combine, DO NOT OVER MIX.
Remove from mixing bowl, knead for about 8 minutes. Then place in oiled bowl in a warm spot covered with a dry towel.
Once it rises to double in size, remove, place dough on half sheet pan. Knead with fingertips & season with desired seasoning, letting it rise to double in size one last time. Bake at 425 until golden brown.
