    4 cups  flour
    3 1/2 tsp  baking powder
    1/2 tsp  cinnamon
    1/2 tsp  nutmeg
    1 pinch  salt
    2 cups  sugar
    2 cups  coconut, grated
    2 large  eggs, beaten
    1/2 cups  evaporated milk
    1/2 cups  unsalted butter, melted
    1 tbsp  water

Directions:

- sift flour, baking powder, cinnamon, nutmeg, and salt together in a small bowl.

- stir in sugar, coconut and beat in egg, milk, and butter.

- add water, stir well.

- divide dough into 2 greased loaf pans.

- bake for 1 hour at 325.
