Don't let the anchovy paste in this dish frighten you off; It imparts a fresh and briny-not fishy"flavor to the salsa. If you're worried about hav ing the rest of the tube left over•.don't be. It's an excellent addition to sauteed broccoli, stir-fries and marinara sauce. (Let it melt in a hot pan be fore adding the other ingredients.) Anchovies are also a good source of omega-3 fatty acids. | |
1/2 teaspoons | kosher salt |
1/2 teaspoon | freshly ground black pepper |
3 | garlic cloves, minced and divided |
1/2 cup | fresh flat-leaf parsley, leaves only |
1/4 cup | freshly squeezed lemon juice |
2 tablespoons | olive oil |
1 teaspoon | anchovy paste |
1/2 teaspoon | crushed red pepper flakes |
In blender, combine salt, pepper and garlic and next five ingredients until smooth.
MAKES 6 SERVINGS.
