Don't let the anchovy paste in this dish frighten you off; It imparts a fresh and briny-not fishy"flavor to the salsa. If you're worried about hav ing the rest of the tube left over•.don't be. It's an excellent addition to sauteed broccoli, stir-fries and marinara sauce. (Let it melt in a hot pan be fore adding the other ingredients.) Anchovies are also a good source of omega-3 fatty acids.
    1/2 teaspoons  kosher salt
    1/2 teaspoon  freshly ground black pepper
    3  garlic cloves, minced and divided
    1/2 cup  fresh flat-leaf parsley, leaves only
    1/4 cup  freshly squeezed lemon juice
    2 tablespoons  olive oil
    1 teaspoon  anchovy paste
    1/2 teaspoon  crushed red pepper flakes

In blender, combine salt, pepper and garlic and next five ingredients until smooth.

MAKES 6 SERVINGS.
