Tarla Dalal. Prep Time: 20 mins. Cooking Time: 20 mins. Serves: 6 Fresh corn Enchiladas Ingredients: 6 corn tortillas mexican tomato sauce
      oil for deep frying
To Be mixed into a stuffing
    1 1/2 cup  cooked sweetcorn
100 gms grated kraft cheese 1 green chilli chopped
    1 tbsp  chopped corriander
1 tomato chopped without seed
      salt to taste
for the baking
    1 cup  mozarella cheese
    1 cup  white sauce

Method
1) Deep fry the tortilla in oil lightly.
2) pour 1/3 of the mexican tomato sauce in the bottom of the baking dish.
3) fill each tortilla with a little stuffing. top it with mozarella cheese
4) Arrange each tortilla seam side down in the sauce, arranging side by side in the baking dish. Moisten the tops of the tortilla evenly with the remaining sauce. cover it with white sauce.
5) sprinkle the mozarella cheese over the enchillads. Bake in hot owen at 200 degree for 15 minutes.
