Paul's Cornbread Dressing

2 boxes | Jiffy corn bread mix, (bake & set aside) |
7 slices | oven dried white bread |
1 sleeve saltine crackers (unsalted) | |
2 c | celery, chopped |
1 large | onion, chopped |
8 T | butter |
7 c | chicken stock, broth (unsalted) |
1 T | sage |
1 T | poultry seasoning |
5 | Eggs,, (beaten) |
Pre-heat oven to 350
In a large bowl combine crumbled cornbread, dried white bread slices, and saltiness, mix together and set aside
In a large skillet, sauté the chopped onion & celery in butter until transparent, approx 5-10 min
Pour sautéed mixture over cornbread mixture
Add the stock, mix well, taste, and add salt & pepper to taste, sage & poultry seasoning, & mix well
Add beaten eggs & mix well
Reserve 2 heaping teaspoons of this mixture fir the giblet gravy
Pour mixture into a greased Pam and bake until dressing us done, 45-60 min
