    1 large or two small  fish fillets
    2 tbsp  canola oil
    3 tbsp  butter
    1 tbsp  capers,, (or more)
    1  lemon, juiced

Heat a heavy pan over medium heat.

Season fish with salt and pepper. Add oil immediately followed by 1 tbsp of butter. Once melted, place fish in pan. Cook until browner and flip. Finish the fish. Remove to a warm plate. Pour out the cooking fat, add remaining butter and quickly fry the capers. Remove from heat and add lemon juice. Pour over the fish. Enjoy!
