Soak 1 lb. of beans in 6 cups of water overnight..., | |
1 lb. | dried pinto or navy beans |
4 slices | bacon |
1 med. | Onion, chopped |
4 med. | garlic cloves crushed |
4.5 cups | water |
1 cup | strong black coffee |
1/3 cup | dark brown sugar |
2 tbsp. | prepared brown mustard |
1/2 cup plus 2 tbsp. | BBQ sauce |
1/2 tsp | hot sauce |
Set oven to 300 degrees. Add bacon to dutch oven and cook over medium heat until slightly browned, 6-8 minutes. Add garlic and cook until fragrant, about 30 seconds. Add drained beans, water, and coffee. Bring to simmer over high heat and cook for 10 minutes. Add brown sugar, mustard, 1/2 cups of BBQ sauce, hot sauce. Return to boil over high heat, cover pot, and transfer to oven.
Cook until beans are tender, 2-2.5 hours. Remove lid and continue to cook, attiring occasionally, until liquid has thickened to syrupy consistency, 1-1.5 hours. Remove from oven, stir in remaining 2 tbsp. barbecuensauce, and season with s&p to taste, and serve
