1 small | red chilli, deseeded and chopped |
225g | can chickpeas, drained and rinsed |
225g | can red kidney beans, drained and rinsed |
1 large can | tomatoes |
1 pint | veg stock |
1 tbsp | tomato puree |
2 tsp | fresh oregano, chopped |
Salt | |
pepper |
Dry fry onion and chilli. Add remaining ingredients and simmer gently for 20 mins.
Serve with salad and roasted vine tomatoes
