Karen's Lime Grilled Chicken & Avocado Salsa

In glass bowl, mix: | |
3 T | coriander, chopped |
1/4 c | lime juice |
2 T | olive oil |
2 cloves | garlic, minced |
1 tsp | salt |

Add 4 boneless chicken breasts and marinate in fridge 30 mins. Combine: | |
Half | red onion, minced |
2 | jalapenos, seeded and chopped |
2 | tomatoes, chopped |
1 T | red wine vinegar |
1/4 c | scant, lime juice |
1/4 c | less 2 T olive oil |
Peel and cut avocado in lge dice; gently toss with salsa.
Grill chicken on med-high.
3 mins per side.
Serve w salsa and lime wedges.
