Ingredients: 250 gms boiled rice 250 gms milk 350 gms sugar 300 gms pineapple 150 gms cherries 500 gms fresh cream 40 gms gelatin powder
    1/2 cup  hot water
(Sauce): 125 gms pineapple cubes 30 gms cherries
    1 tbsp  cornflour
    1 cup  pineapple juice
    1 tsp  cinnamon powder
    1/2 cup  lemon juice

Method:

1.Boil rice and keep aside.
2.Dissolve gelatin in hot water and keep it in hot temperature (oven).
3.Cut cherries and pineapple into cubes.
4.Whip cream and 100 gms sugar in a bowl with a whisk till it gets stiff.
5.Boil milk in a pot and remove.
6.Add gelatin, sugar (250 gms), rice and let it cool.
7.Now add pineapple, cherries, and cream.
8.Mix nicely and pour the mixture in a mould.
9.Refrigerate the mixture for at least 1 hour.
10.Mix pineapple, cherries, pineapple juice, cornflour and lemon juice and make it hot.
11.Add cinnamon powder and mix it gently in thick and hot mixture.
12.Pour the sauce over the pudding.
13.Serve.
