Ingredients:
    1 tablespoon  oil
    1 cup  chopped onions
    1 teaspoon  finely grated Ginger
    1 clove  garlic, chopped
    1/2 teaspoon  turmeric
    1/2 teaspoon  ground cumin
1&1/2 cups basmati rice, rinsed 2&1/4 cups chicken stock
    500g  frozen carrots
      cauliflower
      broccoli
    400g  can chickpeas, drained, rinsed

Lemon wedges & chopped coriander to serve

Method:
Heat the oil in a large flat saucepan.
Cook the onions, Ginger, garlic and spices for 2-3 mins.
Add the rice and stir to coat in the spice mixture.
Pour in the stock and simmer, covered for 12-13 mins until almost all liquid has been absorbed
