Potato-Mushroom Tart

2 cups | mashed potatoes |
1 small | red onion, chopped |
1 clove | garlic, minced |
2 t | thyme |
1 T | olive oil |
2 cups | mushrooms, (cremini and/or oysters), sliced |
1 | pie shell, prebaked |
1 cup | grated cheese, (gruyere) |
Saute onion, garlic, and thyme in a skillet with loive oil over med-high heat until lightly browned, about 4-5 mins. Add mushrooms and saute until tender, 5-7 mins. Spread a 1/2" thick layer of mashed potatoes onto bottom of pie shell. Add mushrooms and top w/ another layer of potatoes. Sprinkle with 1 cup grated cheese. Bake at 350 until heated through and golden, about 20 mins.
