Fish in Green Olive Sauce

Ingredients: | |
4 ½ oz. | cod or haddock |
1 teaspoon | olive oil |
1 cup | onion – chopped |
1 cup | tomato – chopped |
1 | green pepper – chopped |
¼ cup | slice green olives |
1 Tablespoon | capers |
1 Tablespoon | parsley |
1 Tablespoon | cilantro |
1 teaspoon | wine vinegar |
1 | cup mixed berries or 1 apple or 1 orange or 1 pear |
Instructions:
Heat the olive oil in an oven proof sauté pan over medium heat. Add in onion, green pepper and sauté for 2 minutes. Add in green olives, capers, parsley, cilantro and wine vinegar cook for another 2-3 minutes. Add the fish and place in the oven at 325 degrees until fish is flaky, about 12-15 minutes. Have fruit for dessert.
