    7 Tbs  olive oil
    2 Tbs  Sherry vinegar
    2  garlic cloves, finely chopped
    2 tsp  Dijon mustard
    12  cooked prawns, peeled
    4 oz  bacon, cut into strips
    4 oz  spinach leaves
    4 oz  leaf lettuce
      salt
      black pepper

1 - Whisk together 6 T. olive oil with vinegar, garlic, mustard & seasoning in a small sauce pan. Heat gently until thickened slightly, then keep warm.
2 - Heat remaining oil in a frying pan, add bacon & fry until crisp. Add prawns & stir-fry for a few minutes until warmed through.
3 - While bacon & prawns are cooking, arrange spinach & lettuce leaves on 4 individual serving plates.
4 - Spoon bacon & prawns onto leaves then drizzle with hot dressing. Serve immediately
