Curried Bison Biryani w/Barley & Mango

1/2 t | sea salt |
1/2 cup | barley, quick-cooking |
1 medium | onion, sliced into rounds |
2 T | olive oil |
5 cloves | garlic, sliced into rounds |
1 cup | mango, cubed |
1/2 cup | frozen peas |
16 oz. | bison sirloin tip, trimmed of fat and cut into 1/4" strips |
1 cup | cherry tomatoes, halved |
Spice Blend (or 5 t curry powder) | |
1 t | cumin |
1/2 t | cinnamon |
1 t | coriander |
1 t | tumeric |
2 t | ginger |
Boil 1 c water; simmer barley for 10-12 minutes. Mix spice blend and salt and set aside.
Saute onion in large saucepan for 3 minutes; add garlic and saute for another 2 minutes. Stir in spice blend, mango, peas, and bison. Reduce heat and cook for another 5 mins.
