Fudgy Brownies with Caramel

Fudgy Brownies with Caramel 4 ozs butter | |
2 ounces | cream |
1 ½ pounds | semi sweet chocolate |
3 | eggs |
1 ¼ cups | sugar |
1 tbs | vanilla extract |
1 ¼ cups | flour |
¼ teaspoon | baking soda |
1/8 teaspoon | baking powder |
1/8 teaspoon | salt |
5 ounces bitter sweet chocolate broken into ½ “ chunks | |
3-4 ounces | caramel |
Pre heat oven to 325 degrees
Sift flour, baking powder, baking soda, and salt. Set aside.
Lightly grease baking pan and set aside.
Melt butter, chocolate and cream in double boiler.
In separate bowl, whisk together eggs, sugar and vanilla
Add a portion of the chocolate mixture, whisking constantly
Add remaining chocolate and continue whisking.
Whisk in the dry ingredients in 2 lots.
Whisk only until the flour is incorporated.
Add half the bittersweet chocolate to batter and mix.
Pour batter into greased pan, smooth with spatula.
Sprinkle remaining chocolate chips on top.
Spoon globs of caramel onto surface.
Use back of spoon to draw abstract patterns through the mixture
Bake aprrox 3-35 ins or until center is molten and not quite set.
Cool before cutting
Make 12 brownies
Pan size 9 ½” by 13” - quarter sheet
Can also use 9 by 14 or 8 by 8 pan
Can also be cooked in muffin tins and paper cups
