Carrot and Coriander Soup

| Carrot and Coriander Soup I tsp oil | |
| 1 | onion chopped |
| I potato diced | |
| 1 tsp | ground |
| 1.2 litre | vegetable stock |
| 450g | carrots peeled and sliced |
| honey to taste | |
handful of fresh coriander
Heat oil, add onion to soften.
Add coriander and potato for 1 min.
Add carrots and stock, cook for 20 mins.
Add honey and coriander and blend.
