Spinach and artichoke dip

1 can | Artichoke hearts, ( drained and chopped) |
1 jar | roasted red peppers, ( drained and chopped) |
1 frozen package of spinach (thawed and drained) | |
1/2 cup | chopped onion |
1 cup | Mayo |
1 cup | grated Parmesan cheese |
1-2 cups | cheddar cheese for topping |
Combine all ingredients bake at 350 for 20 mins or until bubbling
Makes 1 small batch double the recipe to make a ton:)
