Butter Bean and Tomato

| Butter Bean & Tomato Salad | |
| Large can | butter beans |
| 1lb | cherry tomatoes, quartered |
| 2 small | courgettes |
| 1 | red onion |
| 15-20gm fresh coriander, chopped | |
| 2 tbs | lemon juice |
| 3 tbs | olive oil |
| 1 tsp | ground cumin |
Tip all ingredients into a bowl with some salt and pepper and mix well.
Cover and leave at room emp until ready to serve.
This salad can quite happily be made the day before and chilled.
