Broccoli and Stilton Soup

| Broccoli and Stilton Soup |
Gently cook a small chopped onion in 15g butter until soft.
Add a diced potato and 500ml veg stock.
Cover and simmer for 10 mins
Add 350g broccoli and simmer, covered for another 10 mins.
Puree then reheat
Remove from heat and stir in 50g stilton cheese and 4 tbs crème fraiche
