A Really Great Trifle

A Really Great Trifle Sponge cake 200g. Swiss roll | |
125 ml | sweet wine |
300ml | double cream |
250 ml | custard |
raspberries – 2 good handfuls plus scattering
Crumble cake and put into large dish.
Whip cream until it stands in soft folds. Easier when cold.
Stir ½ whipped cream into custard
Whiz raspberries in blender until almost pouring consistency.
Drizzle mot of sauce over the cake. Spoon custard over cake too letting it fall over the cake to merge somewhat with the raspberries.
Spoon the remaining cream over, scatter some whole raspberries and drizzle rest of sauce.
