1943 Oatmeal Cookies

| ¼ cup | shortening |
| ½ cup | brown sugar |
| ½ cup | granulated sugar |
| 1 | egg |
| 1 tsp | vanilla |
| 1 cup | sifted flour |
| ½ tsp | baking soda |
| ½ tsp | baking powder |
| ½ tsp | salt |
| 1 cup | Quaker Oats |
Pre heat oven – 375 F.
Cream shortening, add sugars gradually and cream well. Add egg and beat well. Add vanilla.
Sift flour , baking soda, baking powder and salt and add with Oats to creamed mixure. Roll small balls of dough between palms until surface is shiny. Bake on ungreased cookie sheet for 12-15 mins
Makes 3 dozen
For Spices cookies – add 1 tsp cinnamon and ½ tsp each of ginger and nutmeg to dry ingredients.
For Raisin cookies add 1 cup raisins to batter before forming cookies
