Potato-Cheese Soup

4 Medium | Potatoes |
2 | Carrots |
1 | Onion, ( Chopped) |
1 | Whole Garlic Clove |
1-2 Tbsp. | Butter |
3 Cups | Milk |
1/2-1 Cup | Grated Sharp Cheddar |
2 Tsp. | Salt |
1/4 | Pepper |
1Tbsp. | Parsley |
Chicken Stock, (optional) |
Cook the potatoes and carrots in water or chicken stock just to cover in a large heavy pot.
Remove potato skins.
Meantime, sauté onions and garlic in butter.
Combine with potatoes, carrots and cooking liquid.
When potatoes are done, puree in batches.
Return puree to pot, add milk cheese and seasonings.
Heat until cheese is melted and soup is hot.
DO NOT BOIL
Optional:
Add ham chunks
