10 oz | romaine lettuce, chopped |
1/4 c | parmesan cheese |
1 c | seasoned croutons |
Freshly ground pepper | |
1 T | fresh garlic, pressed |
1 T | Dijon mustard |
1/2 T | worcestershire sauce |
1 | egg yolk, coddled |
1/2 c | virgin olive oil |
1 t | lemon juice |
2 T | red wine vinegar |
Mix garlic, mustard and worcestershire sauce. Add egg yolk. Add olive oil. Add lemon juice, vinegar and 1/2 of Parmesan cheese. Toss in lettuce. Add croutons and remaining cheese. Sprinkle with pepper.
Serves 2 entrees or 4 sides
