| 1 c. | carrots, shredded |
| 1 c. | zucchini, shredded |
| 1/2 c. | bananas, mashed |
| 3 | eggs, beaten |
| 1 c. | oil |
| butter, alternative | |
| 1/2 c. | nuts |
| 2 c. | sugar |
| 3 c. | flour |
| 1 tsp. | baking soda |
| 1 tsp. | salt |
| 1 tsp. | vanilla |
| 1/4 tsp. | cinnamon |
| 1/4 tsp. | baking powder |
Mix together oil, sugar and eggs. Add carrots, zucchini, bananas and vanilla. Sift together flour, baking soda, baking powder, cinnamon and salt. Add flour mixture slowly to zucchini mixture. Beat mixture well. Grease and flour 2 loaf pans or use a bundt cake pan. Bake at 350 degrees for 1 hour or until done in center. Slice and serve with cream cheese or whipped cream.
