    6 oz  bittersweet chocolate, chopped
    1 1/4 sticks  unsalted butter, softened
    6  eggs
    1 1/4 cups  superfine sugar
    1 cup  almond meal
      flour
    4 tsp  unsweetened cocoa powder, sifted
    1  lime, zest and juice
Preheat oven to 350• Line bottom of 9" springform pan with parchment and butter sides. Melt chocolate and butter in microwave 30 secs at a time until melted. With electric mixer, beat eggs and sugar until tripled in volume, pale and mousselike. Mix almond meal with cocoa powder and gently fold in followed by chocolate and lime zest and juice. Pour into pan. Bake 40-45 mins. Should be firm on top but wobble a bit. Cool. Unmold. Dust with icing sugar and serve with Margarita Cream. Stir together :
    1/4 cup  lime juice
    1 T  tequila
    1 T  triple sec
Whisk in:"
    3/4 cup  icing sugar, sifted
Whip:"
    1 cup  heavy cream

Whisk all together.
