Cheesecake

11/4 cups | Graham wafer crumbs |
1/4 cup | PC churned salted butter, melted |
3 pkg | PC Blue Menu Light Cream Cheese, softened |
3 | eggs |
1 jar | Rasberry spread |
1/4 cup | honey |
Canola oil spray
Preheat oven 350F(180C)
Springform pan w canola oil spray
Stir together Graham crumbs and butter, press into bottom of pan
Mix cream cheese until light and fluffy (2mins)
Beat eggs in one at a time, then rasperry spread until combined, then honey
Pour into crust
Bake in centre of oven for 35 min or until centre is set, place in cooling rack. Run knife around edge to loosen cheesecake then cool to room temperature. Cover w plastic wrap and chill for 4 hrs.
Garnish w fresh fruit and dust w icing sugar
Serves 12
Can replace raspberry w other fruit spread
