    2 T  canola oil
    3 ribs  celery, diced
    2  carrots, diced
    1  onion, diced
    3 cloves  garlic, minced
    1/2 tsp  salt
      dried mint
    1/4 tsp  turmeric
    1 can 28oz  tomatoes
    1/3  dried green lentils, rinsed and drained
    1 T  tomato paste
    1/2 cup  mini shell pasta
    1 can 19 oz  bean medley, drained and rinsed
    2 T  fresh parsley, minced

In Dutch oven, heat oil over medium heat. Fry celery, carrots, onion, garlic, salt, mint and turmeric. Stir occasionally 6 mins..

Stir in tomatoes, breaking up with back of spoon; stir in lentils, tomato paste and 4 1/2 cups water. Bring to boil; reduce heat and simmer, covered, 25 mins..
Meanwhile, in a lge pot of boiling water, cook pasta about 8 mins. Drain and add to soup with beans and parsley. Simmer 5 mins..
Serves 6.
