Almond Snowballs

2 cups | flour or 2 1/2 cups cake and pastry flour |
3/4 cup | ground almonds, (100gm pkg) |
1/2 tsp | salt |
1 cup | unsalted butter, room temp |
1 cup | icing sugar, sifted |
2 tsp | vanilla |
1 cup | chocolate chips |
Preheat oven to 350•
In medium bowl stir flour with almonds and salt until evenly mixed.
In a large bowl, beat butter with 1/2 cup icing sugar. Beat in vanilla. On low speed beat in flour into butter.
Scoop 1 T dough and flatten into a disc. Press in chocolate. Roll dough around it. Form 1" ball. Repeat.
Bake 8-10 mins. Cool. Roll slightly warm cookies in rest of sugar. Cool. Keep airtight in fridge 1 wk or freeze 1 month.
